Food Microbiology Symposium Series
13-14 July 2009
International Association for Food Protection Annual Meeting
Pathogen and spoilage persistence in the processing environment and food products: Where, why and how do we know?
13 July 2009
This session will highlight the need to address microbial persistence throughout the food chain, from primary production to processing, including the importance of persistence in foodborne disease outbreaks and regulatory implications. Speakers will discuss microbial persistence and factors affecting the persistence of Listeria and Salmonella, the role of pathogen persistence in foodborne disease outbreaks, and persistence of spoilage microorganisms.
Attribution of foodborne illness/disease
14 July 2009
Attribution analysis is the science of estimating the relative contribution of different commodities to the burden of foodborne disease. The second session, “Attribution of foodborne illness/disease,” will discuss a more recent approach used to prioritize efforts to control foodborne diseases directed toward the food sources most commonly associated with human disease. The symposium will address the newest estimates of the burden of foodborne illness in the United States and introduce the concept of attribution analysis. Examples of attributing foodborne illness from the United States and abroad and an industry perspective will be provided. For more information contact Darinka Djordjevic (ddjordjevic@ilsi.org).
Hydration & Health
Pre-Congress Symposium at the International Congress of Nutrition
4 October 2009

The session will provide the latest scientific evidence behind recommendations for water, and the latest science on fluid consumption, hydration and dehydration, health promotion and disease prevention.
Co-chairs: Maxime Buyckx (The Coca-Cola Company and Rudy Florentino (National Foundation for the Philippines)
Speakers:
- Ann Grandjean (Center for Human Nutrition and University of Nebraska Medical Center) -physiology of hydration and key health benefits
- Mario Capanzana (Food and Nutrition Research Institute, the Philippines) - consumption data on hydration as well as food sources of hydration
- Eric Jequier (Institute of Physiology, University of Lausanne) - water as an essential nutrient, water balance, signs and effects of dehydration, and water requirements in Europe
- Laurent Le Bellego (Danone Group, France) - future perspectives for healthy hydration, including current limitations of approaches for establishing quantitative fluid recommendations, opportunities for approaches based on water losses and factors of variation, and consequences and perspectives for healthy hydration
